This recipe is easy to prep, cooks up perfectly on the grill, and tastes like a five-star brunch right at your picnic table.

Imagine this: savoury chunks of iconic peameal bacon, crispy from the grill, nestled in a light, fluffy pancake batter infused with a hint of your favourite beer. Drizzled with rich Canadian maple syrup, each bite is a perfect balance of smoky, salty, and sweet. It’s the kind of meal that fuels a day of hiking, paddling, or simply relaxing by the lake.

Ingredients for Peameal Bacon Pancake Cups

  • 6 slices peameal bacon
  • 1 cup (500 mL) flour
  • 1 tbsp (15 mL) sugar
  • 1/2 tsp (2.5 mL) baking soda
  • 1 tsp (5 mL) baking powder
  • 1/2 tsp (2.5 mL) your favourite BBQ rub 
  • 1 egg
  • 1 cup (250 mL) beer
  • 2 tbsp (30 mL) butter, melted 
  • 1 tsp (5 mL) vanilla extract
  • 2 green onions, finely sliced
  • Avocado oil cooking spray

Step-By-Step Grilling Instructions

PREHEAT GRILL: Fire up your grill to a high heat, between 425-450°F (219-232°C).

GRILL THE BACON: Place the peameal bacon slices directly over the heat. GRILL for 3-4 minutes per side, until fully cooked and you have some nice grill marks. The safe internal temperature is 145°F (63°C).

COOL & CHOP: REMOVE the cooked bacon from the grill and let it cool on a cutting board. Once it’s cool enough to handle, CHOP it into bite-sized chunks.

MIX DRY INGREDIENTS: In a large bowl, WHISK together the flour, sugar, baking soda, baking powder, and BBQ rub.

MIX WET INGREDIENTS: In a separate, smaller bowl, WHISK the egg with the beer, melted butter, and vanilla extract until smooth.

COMBINE THE BATTER: POUR the wet ingredients into the dry ingredients. WHISK until just combined—a few lumps are okay, so be careful not to overmix. Gently FOLD in the sliced green onions.

PREPARE THE CUPS: SPRAY 12 silicone muffin cups with cooking spray and SPOON the batter evenly among them.

ADD THE BACON: TOP each cup with the chopped peameal bacon, gently pressing the pieces into the batter.

GRILL THE CUPS: Place the filled cups on the grill over indirect heat (a spot away from the direct flame). CLOSE the lid and BAKE for 18-20 minutes. The cups are ready when a wooden skewer inserted into the center comes out clean.

SERVE WARM: Carefully REMOVE the pancake cups from the grill. GARNISH with extra green onions and SERVE immediately with lots of Canadian maple syrup!
