Ingredients for Peameal Bacon Pancake Cups
- 6 slices peameal bacon
- 1 cup (500 mL) flour
- 1 tbsp (15 mL) sugar
- 1/2 tsp (2.5 mL) baking soda
- 1 tsp (5 mL) baking powder
- 1/2 tsp (2.5 mL) your favourite BBQ rub
- 1 egg
- 1 cup (250 mL) beer
- 2 tbsp (30 mL) butter, melted
- 1 tsp (5 mL) vanilla extract
- 2 green onions, finely sliced
- Avocado oil cooking spray
Step-By-Step Grilling Instructions
PREHEAT GRILL: Fire up your grill to a high heat, between 425-450°F (219-232°C).
GRILL THE BACON: Place the peameal bacon slices directly over the heat. GRILL for 3-4 minutes per side, until fully cooked and you have some nice grill marks. The safe internal temperature is 145°F (63°C).
COOL & CHOP: REMOVE the cooked bacon from the grill and let it cool on a cutting board. Once it’s cool enough to handle, CHOP it into bite-sized chunks.
